Beijing | Deep-fried baijiu ice cream at the Brickyard

The Brickyard at Mutianyu has been part of World Baijiu Day since the beginning and this year is no exception. Guests can expect two tasty baijiu options from August 9 through August 11, all with a Great Wall of China view.

First, there are baijiu liqueur spritzers by the glass (元38). The team here has long made its own liqueur range using everything from hawthorn to Yunnan coffee. Learn more about that here.

“I’m using vanilla ice cream mixed with baijiu,” says Randhir Singh. “The flavor stays inside the ice cream. It is almost like a brandy ice cream.”

Singh says it’s tricky to get just the portions at the right size and, in turn, temperature. But when that sweet spot is reached, “it is perfect,” he says.
