Expect “a baijiu-fueled bonanza” for World Baijiu Day, says Jordan Porter of Chengdu Food Tours, who is following up parties at Cube Bar in 2018 and Beer Nest in 2017 with a bash at Cali Co Cocktails this year.
“We just throw a big party on World Baijiu Day because we do events all year,” says Porter. “There will be flights of baijiu, and a whole bunch of homemade paojiu, and some cocktails we’re working on.”
Things get started at 8 PM with a guided baijiu tasting for beginners who want to get a bit more background on China’s national spirit.
The baijiu bonanza then begins at 9. There will be a trio of baijiu-inspired cocktails from the Cali Co team. Bartender Riley Tritz is doing a riff on the Negroni, a drink with plenty of bright fruit punch, and a cocktail inspired by local ingredients and that features Sichuan peppercorn-infused gin.
There will also be baijiu flights, so people can compare and contrast different brands. And homemade paojiu.
“Families throughout Sichuan infuse their own baijiu at home in clay urns or glass jars, with local fruits, roots and herbs,” wrote Porter in this post. “Most restaurants in Chengdu either make their own infusions, or purchase them from farmers or producers that do.”
Add in free shots and prizes and there ain’t no party like a Chengdu Baijiu Club party.
