Danwei Canting is representing Portland once again for World Baijiu Day. And has a simple solution that also sounds like it can handle the summer heat — cucumber salad paired with a chilled shot of Ming River baijiu.
“Many in the U.S. are not acclimated with the nuance of the spirit and our cucumber salad will highlight the strong aroma in Ming River without bogging it down with too many ingredients,” says Nick of Danwei.
“I’m going for simple and clean. But for fun.”
Nick also says he’s mulling over creating a baijiu twist on the summer classic Pimm’s Cup.
