Capital Spirits, which bills itself as the “first full service baijiu bar in the world”, opened last fall in Beijing and has since attracted a steady stream of imbibers. Whether one is a baijiu aficionado or newbie, there are plenty of options, from perfect-for-beginners mixed flights that include a pour each from the rice, light, strong and sauce aroma categories to those focused on a particular style to those that group together more arcane brands.
“Capital Spirits is the ideal place to sample the whole range of what baijiu has to offer, from easily accessible rice aroma baijius from Guangxi to deeply funky and complex dong aroma baijius from Guizhou,” says co-owner Bill Isler. “We also have stranger items, such as snake-infused baijiu for male virility, and chili pepper and sichuan peppercorn infusions for braver souls — or wanna-be macho men.”
