Cocktail specialists R&D in Taipei will feature a pair of recipes based on kaoliang (高粱), Taiwan’s most famous spirit, for World Baijiu Day, say Spencer Huang, Yann Gueroult and Dale Kung. Not surprisingly, given the “build to spec” philosophy at this bar, the concoctions are intriguing.
Kaoliang Spring uses its namesake spirit along with Taiwanese plum syrup, lemon juice and Elemakule Tiki and Ume bitters, while the Silver Leaf Martini has kaoliang, High West Silver OMG rye, Mayfair gin, Cocchi Americana, homemade falernum and grapefruit peel, among other ingredients.
As usual, the team at R&D will also be getting creative being the bar and using home infusions and syrups with a Taiwanese take, including local ingredients such as lychee and daylily, says Huang.
