By Jim Boyce | Pop-Up Beijing returns for the second annual World Baijiu Day with another tasting extravaganza. Many people don’t realize there are baijiu brands in places like the United States and New Zealand, but both countries, as well as China, will be represented among the half-dozen labels in this year’s World Baijiu Tour.
And, says co-owner Glenn Schuitman, it’s a sipping, not a shooting, event.
“We operate on a strictly ‘no ganbei’ policy when drinking baijiu,” he explains. “We encourage guests to sip and savour each variety, to better experience the more subtle and delicate notes behind the commonly recognised ‘burn’ of your typical brutal ganbei session!”
Sip, don’t shoot. And try not break any of the antiques or old-timey reproductions.
The tasting is from 7 PM to 8 PM on Saturday, August 6, and costs rmb50, with all funds to Good Works, which trains late-teen orphans and helps find them jobs in the coffee industry.

Pop-Up also is close to Jing-A, which will have its Qu Brew on tap, and Gung-Ho, which will again make ‘drunken shrimp’ pies.
