Food | Lemon Baijiu Gummies in Beijing

Alex Jennings has been getting creative in the kitchen with gummies lately so I asked her to give a baijiu version a shot. To help facilitate that, I handed over some partial bottles of the baijiu-based liqueurs I got from The Schoolhouse at Mutianyu a while back. A few days later, Jennings had a slew of lemon baijiu gummies in the shape of Lego men, R2D2s and more.

These gummies have a nice, er, gummy texture. And they are quite mild at first before that lemon-y zing hits.

I had fun using them last weekend as garnishes for the martinis made by Randy Svendsen at Mali Wine Cellar. The slight stickiness made them easy to attach to the glass although the Lego Men seemed to prefer a nice boozy swim.

Look for more flavors from Gummy Guru Jennings soon. She is experimenting tonight with the hawthorn, apricot and five-spice baijiu liqueurs.
