This year’s Wine to Asia trade fair in Shenzhen in August will be closer to Wine to GanBeiSia* for at least part of one afternoon.
Wine to Asia will host a cocktail “master lab” focused on baijiu, China’s national spirit and one piquing the interest of bartenders here and around the world. The lab will be led by Jackwing Yao from Guangzhou-based baijiu bar Sanyou and Eva Yin from Shenzhen-based bar Compass By Curator–both venues have been supporters of World Baijiu Day.
So, what can guests at the “master lab” expect? They will not only learn about different baijiu styles, they will also get a “hands on” experience. Each will have a set of bartending equipment and, in turn, be pouring and stirring and shaking and garnishing–making baijiu cocktails!–under the tutelage of Yao and Yin.

* For those new to baijiu culture, GanBeiSia is a portmanteau of ganbei, a toast among baijiu drinkers that means “dry glass” or “bottoms up”, and Asia.
